Το σιτάκε ( Lentinula edodes ) ή αρωματικό μανιτάρι στα κινέζικα, αλλά και η φακή της βελανιδιάς (κοινή ονομασία στα γαλλικά), είναι ένα βρώσιμο μανιτάρι που φύεται στην Άπω Ανατολή στο ξύλο διαφόρων σκληρών ξύλων και το οποίο παίρνει το ιαπωνικό του όνομα από το δέντρο σιί ( Castanopsis cuspidata ) που είναι ο ιστορικός ξενιστής του. Το τελευταίο είναι ένα δέντρο με πολύ μικρά φύλλα, από την οικογένεια Fagaceae, συγγενικό με τη βελανιδιά και την καστανιά (Castanopsis που σημαίνει «ψεύτικο κάστανο»).

Το σιτάκε είναι το δεύτερο πιο καλλιεργούμενο μανιτάρι στον κόσμο, με την Κίνα να είναι ο μεγαλύτερος παραγωγός. Καλλιεργείται εκεί για τουλάχιστον 1000 χρόνια. Καλλιεργείται επίσης ευρέως στην Ιαπωνία. Οι Ιάπωνες το ονόμασαν «το μανιτάρι σαμουράι» επειδή προοριζόταν για τον αυτοκράτορα και τους πιστούς του.

Παραδοσιακά καλλιεργούνταν σε νεκρά φυλλοβόλα κλαδιά με τρύπες στις οποίες εισαγόταν μυκήλιο (βλαστός μανιταριού) ή σε ξύλινα κούτσουρα. Σήμερα, καλλιεργείται συχνότερα σε μανιταροκαλλιέργειες σε προ-σπαρμένα κομπόστ που μοιάζουν με φελλό. Βυθίζεται σε κρύο νερό για να επιταχυνθεί η καρποφορία.

Το σιτάκε είναι πρωτίστως ένα πολύτιμο συστατικό στην κουζίνα αυτών των δύο χωρών, αλλά αποτελεί επίσης μέρος των παραδοσιακών φαρμάκων τους.
